Dolores' Brokenhearted Chicken
This comfort food recipe, featuring butter, bacon, chicken, and wine, is an easy and perfect meal. It can be prepared in about an hour and pairs well with mashed potatoes and corn.
Ingredients
- ½ cup flour
- 4 pieces of bone-in chicken thighs and/or drumsticks
- Kosher salt
- Freshly ground black pepper
- 2 slices bacon, chopped
- 3 Tbsp olive oil
- 5 cloves garlic, sliced
- 1 cup chicken stock
- ½ cup dry sherry
- 2 Tbsp chopped parsley
- 2 Tbsp butter, cut into cubes
Steps
- Preheat oven to 350°F.
- Season chicken with salt and pepper.
- Dredge chicken in 1/2 cup flour.
- In an oven safe pan, cook chopped bacon over medium-high heat until crisp.
- Transfer bacon to a bowl; set aside.
- Add oil to skillet and brown chicken on both sides until golden brown.
- Transfer to a plate and set aside.
- Add garlic to the skillet, and cook, stirring, until golden brown, about 2 minutes.
- Add stock and sherry to the pan.
- Return chicken to the skillet.
- Sprinkle the chicken with cooked bacon, chopped parsley, and then top with butter cubes.
- Cover and transfer skillet to oven for 30 minutes.
- Baste several times during cooking.
- Remove the top for the last 10 minutes and cook until done.
